Brighten up your eye color (and your recipe book)! )
Start with a pastry ingredient that you may be more familiar with: carrots. You may not be surprised by this one, as we have all enjoyed a moist and spongey carrot cake. This texture is due in part to the carrots’ rich fibre content, both soluble and non-soluble. It also helps with digestion.
Carrots also give our dishes a vibrant, natural color thanks to beta-carotene. This is a antioxidant which our bodies convert into Vitamin A. Together with other minerals and vitamins, this can help promote healthy skin, radiance and eyesight. Carrots can help you see better in the dark.
You can make a variety of cakes and creams with them, as they are sweet, subtle, and don’t require a lot of sugar. We’ve got the perfect example in , our latest recipe book, where we combine kale and carrots (yes, that is correct) to make the Carrot Kale. It’s a healthier, tastier twist on a traditional recipe.
A surprise in the form of a leaf
Let’s explore what kale can offer to our pastry creations.
We know that kale may not be an ingredient that you would expect to see in a standard recipe book. But, hear us out.
Kale comes in a variety of colors, including green, purple and curly. It also contains a wide range of vitamins and minerals such as calcium and potassium.
Kale contains a tiny amount of omega 3 – a vital nutrient our bodies cannot produce on their own.
Kale has a wide range of health benefits. Kale is more difficult to include in our recipes because of its strong flavor. However, with the right flavors, it can add fiber and richness.
Eat your greens
broccoli is also a member of the cruciferous vegetables family. This green, tree-like vegetable, like kale is packed with nutrients and, as well as many other components that can keep you and your body happy and healthy.
Broccoli contains fiber and protein . It is therefore a good source of for digestive health. This vegetable is also rich in vitamins, folic acids, calcium, potassium and selenium. That’s a whole lot of vitamins.
All these components have many health benefits. For example, they reduce the amount of cholesterol overall in the body.
How can we use this bitter tasting vegetable in our recipes? You can mask the bitter taste of broccoli by pairing it with strong flavors like dark chocolate.

Not the usual salad ingredient

Beetroot is not only rich in nutrients, but also fiber. Its naturally vibrant colour can liven up any recipe. Beetroot is a great option for a colorful dessert that doesn’t require artificial coloring. It also adds sweetness to your recipe. Its distinctive flavor goes well with many ingredients such as coconut, like in our little gateau Coco-beet.
Beetroot is used in our Red Velvet cake recipe to give it a beautiful, red color.
The superseed
We could not possibly have come this far without mentioning one of our favorite unexpected ingredients. That would be sesame.
Many people love sesame seeds. They are often used as a garnish or topping in Asian cuisine. Sesame seeds are a great way to get your daily fibre. They can be used in recipes that lack this ingredient.
Sesame comes in a variety of forms: oils, pastes and butters or plain seeds. Depending on the form, it can give our recipes a rich nutty taste or a rustic, slightly toasted flavor.
They’ve been incorporated into our tartlet recipe, where we have taken their notorious nutty taste and transformed it into an amazing sesame cream paired with a orange gelee.
